Demand for locally and regionally grown food has increased enormously in recent years. This interest is attributable to increased awareness about the importance of healthy, nutritious foods in the face of dramatically rising childhood obesity as well as rising consumer awareness about where their food comes from due to recent food safety scares and a desire to support local economic development and neighborhood and regional businesses.
In response to rising consumer demand, many wholesale markets including grocery stores, hospitals, grade school, university, and corporate cafeterias that have not been buyers of locally produced foods in recent years are considering ways that they can provide their customers with healthy, locally grown foods.
