Turkey Taco Salad
1 lb. ground turkey
1 envelope taco seasoning mix
1 head lettuce
1 cup low-fat shredded cheese
1 cup chopped tomatoes
1/2 cup chopped onion
1 can (4 oz.) sliced ripe olives, drained
1 can chili beans, drained
1 small bag baked tortilla chips
4 oz. Fat-free Catalina salad dressing
4 oz. Salsa
Brown turkey. Add taco
seasoning and prepare according to package directions. Cool.
Toss with remaining ingredients in a large bowl. (We recommend
that you add tortilla chips just before they are served to keep
them from getting soggy).
Strawberry Freeze
1-1/4 lbs. Frozen
unsweetened strawberries
1 cup strawberry low-fat yogurt
3 tablespoons confectioner's sugar
1/2 teaspoon vanilla extract
Place frozen strawberries
in a food processor. Process until berries are very fine. Add
remaining ingredients and process until smooth.
