Position Priorities

Serve as resource and provide support for county colleagues implementing educational programs and initiatives directed at local, regional, and state issues related to poverty, hunger and food insecurity.

Education

  • Bachelor of Science Dietetics and Spanish Major, University of Wisconsin-Madison
  • Master Public Health Nutrition and Global Health Certificate, University of North Carolina Gillings School of Global Public Health
  • Registered Dietitian

Previous Professional Experience

Amber joined UW-Extension in February 2011 after consulting with the United Nations Children’s Fund (UNICEF) in the Dominican Republic. She has also worked as an intern with the Network for a Healthy California to develop the infrastructure for the analysis of a state-wide community food security project. Additionally, she has worked as a research assistant for the University of North Carolina-Chapel Hill to identify and develop global public health nutrition course curricula and with the Kids Eating Smart and Moving More obesity treatment and prevention study.

Highlights of Current Assignments

  • Provide resources and guidance for colleagues working to assess and address poverty, hunger and food security issues in their communities through evidence-based strategies.
  • Review and prepare relevant educational materials, including training resources.
  • Participate in state coalitions and partnerships addressing poverty, hunger, and food insecurity.
